Pumpkin Spice Cake

2 boxes dry spice mix

2 15-ounce cans plain pumpkin

Set the oven at 350. Mix the dry cake mix with the pumpkin, combining well. (No, you do not use oil, water, milk or eggs.) Spoon the batter in an angel food cake pan that has been sprayed with nonstick cooking spray. Bake for 70-75 minutes. (It takes 75 minutes in my oven.) Remove from oven and turn upside down on serving plate. Remove the pan and let cool. Add glaze of 1 cup powdered sugar and 1 tablespoon water for a glaze, or skip the glaze and serve with whipped cream or whipped topping, your choice.

Note: If you like less spice, use one spice cake mix and one yellow cake mix. This recipe also makes tasty muffins. Use a muffin pan and shorten the baking time to 15 minutes.
