1 package yellow cake mix
1 tablespoon grated lemon peel
1 1/2 teaspoons ground nutmeg
1 plastic baby figure or a gumdrop
1 1/2 cups powdered sugar
1 tablespoon lemon juice
3 tablespoons granulated sugar, divided
Red, blue, yellow and green food coloring
Preheat oven to 350. Coat a 9-inch by 13-inch baking pan with cooking spray. Prepare the cake batter according to package directions. Add the lemon peel, nutmeg and gumdrop or baby figure to the batter. Bake in prepared pan according to directions. Cool completely on a wire rack.
In a small bowl, combine the powdered sugar, lemon juice and water until the mixture forms a creamy glaze. Spread the glaze over the cooled cake. Place 1 tablespoon granulated sugar into each of three small resealable plastic storage bags. Add 1 drop red and 1 drop of blue food coloring to one bag to create purple sugar; mix well. Add 2 drops of yellow to another bag. Add 2 drops of green to the third bag, mixing each well with the one tablespoon sugar.
Sprinkle the dyed sugars over the glaze to decorate as desired.
