Hot Quinoa Breakfast Cereal with blueberries is a filling option.

1 cup quinoa, rinsed

2 cups milk or milk substitute

2 cups fresh blueberries

½ cup almond slivers

¼ teaspoon ground cinnamon

2 tablespoons honey or agave nectar


Place the quinoa and milk in a medium saucepan and bring to a boil. Reduce the heat to low, cover with a tight-fitting lid and simmer for 15 minutes or until the quinoa is cooked. Remove the pan from the heat and let sit, covered, for an additional 5 minutes. Uncover and stir in blueberries, almonds, cinnamon and honey then spoon desired amount into breakfast cereal bowls. Top with toasted quinoa if desired. Serves 4 to 6.
