Taste | Simple Summer Quinoa Salad

Simple Summer Quinoa Salad can be a lunch option served in layers in a glass jar for easy transport. Other vegetables can be added such as broccoli or peppers.

2 cups cold cooked quinoa

1 cup fresh basil leaves, chopped

1 cup cucumber, chopped

1 cup grape tomatoes, halved

½ cup sweet onion, chopped

¼ cup your favorite vinaigrette


Place all ingredients except the vinaigrette in a large mixing bowl and gently stir until they are well combined. Slowly drizzle the vinaigrette over the salad then stir to combine. Chill in the refrigerator for an hour before serving. Serves 4 as a side dish.
