Breakfast Grilled Cheese

Yield: 2 sandwiches

Time: 10 minutes


⅓ cup bacon crumbles

⅓ cup shredded cheddar cheese

⅓ cup shredded Monterey jack cheese

4 homemade or store-bought cooked waffles

2 tablespoons salted butter, softened


Preheat your griddle over medium heat. In a small mixing bowl, combine the cheeses and bacon crumbles. To build one sandwich, layer half of the cheese and bacon mixture on one waffle and top with another waffle. Butter the outside of each waffle with about ¼ of the butter. Once both sandwiches are made, place them onto the griddle and press down with the back of your spatula or a bacon press. Cook for 2 minutes or until the underside is golden brown. Flip each sandwich and repeat. Slice each sandwich in half and serve immediately.
