Merry Meatloaf

This is a modern adaptation of a classic recipe dating back to the 1940s.

Yield: 6 servings

Time: 1 hour, 10 minutes


1½ cup dry breadcrumbs

¾ cup milk

2 eggs

¼ cup tomato juice (or ketchup)

1 teaspoon salt

½ teaspoon celery salt

¼ teaspoon pepper

1 tablespoon grated onion

1 teaspoon minced parsley

1 pound ground beef

1 pound ground pork


Stir together the breadcrumbs and milk in a large mixing bowl then beat in the eggs. Add the tomato juice, salt, celery salt, pepper, onion, and parsley and stir until well combined. Add the meat and mix thoroughly. Bake in greased loaf pans at 350 degrees for about 1 hour.

Note: To glaze, combine ¼ cup each ketchup and chili sauce with 1 tablespoon brown sugar, 1 teaspoon Worcestershire sauce, and prepared horseradish to taste. Coat the top of the meatloaf half-way through the baking time.
