Preheat your oven to 400°F. In a large mixing bowl, stir together all ingredients until they are well combined. Place the potato mixture into a pastry bag with a large star tip. Pipe about ¼ cup of potatoes into mounds on a greased baking sheet. Brush the tops with egg wash and bake for 20-25 minutes or until lightly browned.
Note: To make the egg wash, whisk together 1 egg with 1 teaspoon water.
