Spiced Honey-Glazed Cashews

1 pound whole cashews

3 tablespoons butter

2 tablespoons honey

1 tablespoon brown sugar

1 teaspoon chili powder

1/2 teaspoon cumin

1/4 teaspoon salt

1/4 teaspoon cayenne pepper


Preheat your oven to 350°F. Melt the butter in a saucepan over medium heat then stir in the honey and brown sugar. Continue cooking until the sugar dissolves then turn off the heat. Add the cashews and stir until the cashews are well coated. Place the cashews in a single layer on a greased baking sheet and bake for 10 minutes, stirring every 3-4 minutes.

While the cashews are in the oven, combine the chili powder, cumin, salt, and cayenne in a mixing bowl. Sprinkle this evenly over the warm cashews and toss until they are well coated. Let the cashews cool before serving. They will be sticky when warm by will crisp up a bit when they cool down.
