2 French bread sandwich rolls, sliced in half
3 garlic cloves, finely minced
⅓ cup extra-virgin olive oil
½ teaspoon salt
⅛ teaspoon crushed red pepper flakes
1 log (16 ounces) fresh mozzarella cheese, thinly sliced
2 large tomatoes, thinly sliced
¼ cup finely sliced basil for garnish
¼ cup balsamic vinegar
1 tablespoon honey
Preheat your oven to 350 degrees. Place the bread halves on a large baking sheet and set aside. In a medium bowl, mash together garlic, olive oil, salt and red pepper flakes. Spread the garlic mixture onto French bread halves. Bake for about 10 minutes or until the bread is lightly toasted. Top the toasted bread with mozzarella slices and tomato slices and bake until the cheese has melted. This should take 5-10 minutes.
To make the balsamic glaze, combine balsamic vinegar and honey in a small pan and bring to a simmer. Cook until the glaze is reduced by half, stirring occasionally. This will take 6-8 minutes. The glaze is done when it coats the back of a spoon without dripping. Remove the glaze from the heat and let cool.
Drizzle the garlic bread with the balsamic glaze and sprinkle the basil over the top before serving. Serves 2-4.
