Cabbage is finally starting to be noticed. It’s a cruciferous vegetable, sitting right alongside it’s Brassica family counterpart, kale, the king of superfoods. Cabbage is low in calories, but rich in fiber, potassium, folate and vitamins A, C and K. It also has a team of phytonutrients, which are compounds that help lower inflammation and reduce the risk of cancer. It is inexpensive and extremely versatile. No wonder cabbage is trending in the culinary world!
